A quick and flavorful breakfast hash.
In a large, oven safe skillet, begin cooking the sausage.
Once a good crust has been formed on the sausage, add in the bacon.
Cook until bacon is almost cooked and crispy and then add in the potatoes, scallion whites, garlic and seasonings.
Cook on medium heat until potatoes are tender. (I dice my potatoes fairly small so that they cook faster and more evenly.)
Add about a 1/4 cup of water to the skillet and cover to help the potatoes cook faster if needed.
Once the potatoes are tender, make 4 small wells in the hash mixture and crack an egg into each well. Sprinkle with a little more salt & pepper and place uncovered in a 400 degree oven for about 12 to 15 minutes or until the eggs are set to your liking.
