Ingredients

  • 3 to 4 slices of bacon chopped
  • 2 lbs stew meat
  • 1 onion chopped
  • 1/4 cup flour
  • 2 tbsp tomato paste
  • salt & pepper to taste
  • 2 bay leaves
  • 1 tsp fresh thyme leaves
  • 2 cloves garlic minced
  • 4 carrots diced
  • 2 stalks of celery diced
  • 1 tbsp soy sauce
  • 1 cup red wine
  • 4 cups beef broth
  • 1 tbsp butter to finish

Instructions

  1. In a heavy oven proof stock pot cook the bacon until crispy.

  2. Add in the beef and seasonings and cook until browned. You may want to do this step in batches if your pot is not large enough.

  3. Once the beef mixture has browned, add in the onions, garlic, thyme and bay leaves and cook until fragrant.

  4. Sprinkle the beef mixture with the flour and cook until totally combined and coated.

  5. Add in the tomato paste and soy sauce and stir to combine.

  6. Place the carrots and celery in with the thick mixture and stir to combine.

  7. Add in the wine and cook for about 2 or 3 minutes before adding the beef broth.

  8. Once the mixture returns to a boil, cover with a lid and place in a 375 degree oven and roast for 2 hours.

  9. Right before serving, add the butter in and stir to combine.  It adds a nice finishing touch to the beef bourguignon.
