One Skillet Breakfast Hash.

Y’all….this was so yum!  I cannot lie….so good!

It’s also VERY easy!!! I used a Cajun deer sausage {my fave} because it’s a lean and flavorful sausage.  If you do not have access to a Cajun sausage, you can easily use a smoked beef version. It’s all good.

It’s a quick breakfast/lunch/dinner to put together. You know, sometimes you just want something more than your normal breakfast and this one sure hit the spot! It’s also very versatile in the fact that you can change up the ingredients to pretty much whatever you like or what you have on hand. I think sweet potatoes would be awesome to try with maybe a breakfast sausage and a few chopped walnuts. Sorry, I’m thinking out loud.  That’ll be for another day….stay tuned.

My dad….who lives just down the road from me, is growing fresh green scallions….among other things, and he pulled a couple for me to use this past weekend, so I decided to chop them up and use them in this yummy breakfast hash.  Boy, did they add a punch of flavor to the hash!  Love scallions….especially home grown….and from my daddy! wink

One Skillet Breakfast Hash.

A quick and flavorful breakfast hash.

Ingredients

  • 1 link Cajun smoked sausage or whatever sausage you like
  • 3 slices chopped bacon
  • 3 scallions sliced
  • 2 cloves of garlic minced
  • 2 Yukon gold potatoes diced
  • 4 eggs
  • 1/2 tsp Hungarian Paprika
  • salt & pepper to taste

Instructions

  1. In a large, oven safe skillet, begin cooking the sausage. 

  2. Once a good crust has been formed on the sausage, add in the bacon. 

  3. Cook until bacon is almost cooked and crispy and then add in the potatoes, scallion whites, garlic and seasonings. 

  4. Cook on medium heat until potatoes are tender. (I dice my potatoes fairly small so that they cook faster and more evenly.)

  5. Add about a 1/4 cup of water to the skillet and cover to help the potatoes cook faster if needed.

  6. Once the potatoes are tender, make 4 small wells in the hash mixture and crack an egg into each well.  Sprinkle with a little more salt & pepper and place uncovered in a 400 degree oven for about 12 to 15 minutes or until the eggs are set to your liking.
