Oh….lemon! I LOVE lemons. Truly I do….they are a constant staple in my kitchen.
I recently read somewhere that getting more lemons in your diet is extremely healthy for you. The article said to try to use them whenever you can….in water, salad dressings, pastas, soups, etc. The more you get…the better you feel. I’m trying to use them more than I usually do and believe it or not, it’s not even hard.
Besides, with all of the cold weather that we have recently had…they make me feel like summer. Who doesn’t need a little sunshine in their lives….am I right?
So, I decided to make a batch of these lemon bites. My MIL used to make some similar to these and I wanted to surprise her with them.
These lemon bites are so cute and fluffy, I challenge you to eat just one. Just sayin’….I’m getting it out there….fair warning…..they are addictive. That’s why I like making them miniature size. If I eat two or three…that’s not bad right? Hmmmm…
BUT….if you wanted to, you could totally do these in cake pans or cupcakes. It’s totally up to you!
Did I mention how fluffy and lemon-y they are? OMG….I want one right now.

Lemon Bites.
A fluffy and light little bite of lemon. They are perfect in every way.
Ingredients
For the cake
- 2 cups of all purpose flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 1 stick unsalted butter softened
- 1/2 cups granulated sugar
- 3 large eggs
- 1 cup milk
- 1 tsp lemon extract
- zest of a lemon
For the glaze
- 1 cup powdered sugar
- juice 1/2 a lemon
- 1 drizzle vegetable oil
- 1 pinch salt
- 1 tbsp water use if needed for consistensy
Instructions
For the cake

Preheat the oven to 350 degrees.

In a mixing bowl, combine the flour, baking powder and salt and set aside.

In another bowl, mix the butter and sugar together until creamy.

Add in the eggs one at a time until combined.

Add the flour mixture to the egg mixture alternating between additions of the milk. (Add the milk and flour mixture to the egg mixture in 3 equal parts until just combined.)

Add in the lemon zest and the lemon extract and stir to combine.

Generously grease a miniature muffin tin and fill each one halfway with the batter.

Bake for 10 to 12 minutes or until the cake pulls away from the sides of the pan and the lemon bites are slightly golden.

Cool on wire rack.
For the glaze

Mix the powdered sugar, lemon juice, vegetable oil and salt together in a bowl and add the water as needed for your desired consistency.

Dunk each lemon bite in the glaze top side down and place back on the cooling rack to set.
