OMG…..a BIG shout out to Ali over at Gimme Some Oven. I happened upon her blog the other day and this recipe jumped out at me right away. If you didn’t already figure out that I love SOUPS….of any kind….let me just break it to you now….I.LOVE.SOUP!!!!! I always have…I always will! It’s just my thing.
Anyway, upon finding Ali’s blog, I saw her recipe that is for a 5 ingredient Carnitas Soup and knew that I had to try a version of it. Disclaimer: My version is more than 5 ingredients….sorry.
I kept Ali’s suggestions of avocado, arugula and cilantro as the garnish and boy was she right! So tasty! The avocado adds a creaminess that goes well with the potatoes and the arugula adds just the right amount of peppery bite! So good.

Carnitas Soup with Potatoes, Cilantro & Lime.
Ingredients
- 2 cups of carnitas shredded
- 6 cups of chicken broth
- 2 cups of water
- 8 medium Yukon gold potatoes cubed
- 1 16 oz jar of salsa verde
- 1 tsp of ground cumin
- 1/4 tsp of coriander
- salt & pepper to taste
- 1/4 cup of chopped cilantro plus more for garnish
- juice of 1/2 lime
Instructions
To make soup:

In a soup pot, heat the chicken stock, water and Salsa Verde until it comes to a boil.

Add the potatoes, cumin, coriander, cilantro, salt, pepper and carnitas.

Bring back up to a boil and then lower the heat to a simmer and cover.

Cook until the potatoes are tender. (20 to 30 minutes or more)

Finish it off with the juice of 1/2 lime and a sprinkling of freshly chopped cilantro.
To serve:

Ladle in a bowl and top it with fresh arugula, sliced avocados and cilantro.
Enjoy the yumminess! So satisfying and it has a delightful flavor. It was a big hit at my house! My husband absolutely LOVED it. Thanks again Ali! This recipe is a keeper for sure.
