Can I just say, “Yum”?
I had tons of basil and tomatoes that I needed to use from my garden…
I also had guests over and I needed to feed a group of six and didn’t feel like making individual eggs or worry with keeping them warm for everyone while finishing the rest of my breakfast sides. The frittata is a great way to serve a lot of people at once…plus, it’s so versatile, you can make many versions of it!!! I chose a play on Capresè for this one.
…and let’s face it, this recipe was just too easy to whip together …not to mention~DELICIOUS!!!
It was a “crowd pleaser” and went great with a side of crispy bacon, a trimmed scallion and a nice cup of coffee!! Day made!
Ingredients:
- a dozen eggs whisked
- 1/4 cup of half/half
- 1 tsp kosher salt
- 1/2 tsp of pepper
- 2 scallions trimmed and diced
- 10 cherry tomatoes diced…or a whatever tomatoes that you have on hand
- 6 or more fresh basil leaves, cleaned and chopped
- 1 clove of garlic minced
- 1/4 cup of grated Parmesan
- 1 fresh mozzarella sliced thin
- 1 tsp butter
- spray of non-stick cooking spray
Preparation:
Preheat the oven to 400°. Spray a non-stick pan with cooking spray and melt the butter on medium to low heat. Whisk the eggs, half/half, salt, pepper and Parmesan cheese in a bowl and set aside. Add the scallions, tomatoes and garlic to the pan and saute until fragrant and the tomatoes and onions have softened. Spread out the tomato mixture in the pan and slowly pour in the egg mixture. Layer the mozzarella slices and 1/2 of the basil all over the mixture. Let the sides firm up and run a spatula around them and tilt the pan to allow the egg mixture to run into the sides. Continue this process until you see that the egg mixture is mostly set. It should still have runny eggs on the very top. At this point, you will place it in a pre-heated oven for 5 to 8 min and then turn the broiler on to crisp the top the last minute or so.
Take it out of the oven and top with remaining basil. You can cut it like a pizza or slice it in small squares for a more formal, party-like food. Yum, Yum and so easy!!!
