Have you ever wondered what to do with all of those Holiday Leftovers???? Well, here’s one of my favorite ways to use leftover Holiday ham, turkey, dressing, veggies and mashed potatoes!
Here’s how:
Place a pie crust pricked with a fork and dusted with salt and pepper into the oven at 450 degrees for 8 minutes. While the pie shell is par-baking, start on the pie filling. In a skillet on medium heat, add 2 tablespoons of olive oil, one cup of chopped onion and 1/2 cup chopped celery and sauté until tender. Salt-and-pepper as you go. Add 1 cup of chopped leftover turkey and one and a half cups of chopped leftover ham to the mixture. Cook until heated through. Sprinkle in 2 tablespoons of flour and a little salt and pepper and stir to cook the flour. After a minute or so, put in one cup of chicken broth and stir to combine. Once the mixture has been thoroughly combined add a cup of frozen peas, green beans, carrots and corn mixture and once heated through, add half a cup of heavy whipping cream. At this time your pie shell should be finished and had a chance to cool. Layer the leftover dressing, about a cup, on the bottom layer of the pie crust and top with the pie filling mixture. At this point, you will take your leftover mashed potatoes and in a Ziploc bag pipe them on the top of the pie. This will help you be able to spread the potatoes over the top of the pie without any trouble. Then sprinkle the top of the pie with Parmesan cheese and Panko breadcrumbs totally covering it. Bake at 350 degrees for 35 minutes covered and then for 10 minutes uncovered. If needed, you can set the broiler on high to brown the top. It’s a yummy way to serve leftovers in a new and delicious way!!!! Holiday comfort food!!!
