One of the best recipes I’ve learned from my mother-in-law is called Cranberry Fluff. She has a great story of how she first found it. According to her, it came from a local newspaper article. I’ve never had Thanksgiving or Christmas day without it since I first ate it in 1989, thanks to her! For years she made it for every holiday but as time has gone on, she has passed the responsibility to me and the recipe and I now make it for our family! Let me tell you the recipe….
In a bowl place 2 cups of chopped fresh cranberries and three quarters of a cup of granulated sugar. Once that’s mixed together add 3 cups of tiny marshmallows. Let it sit overnight before you complete the fluff.
The next morning, take a cup and a half of heavy whipping cream and whip it with 2 tablespoons powdered sugar and a teaspoon of vanilla. In the meantime, chop half a cup of pecans any size you want them. Dice two small, peeled apples…I use Gala. Add to the mixture along with half a cup of red grapes that you’ve halved. Stir it altogether sprinkling in a dash of salt just for good measure.chill for at least two hours before serving it makes the most amazing side dish, salad or dessert for any holiday gathering!!!
