Okay….so I think that I did it:) One of my favorite Italian restaurants serves this chili and my family has fallen in love with it!!!! I think that I may have figured it out….my version at least!!! Try it, you’ll love it!!!!
“Italian Chili”
Ingredients
1 lb. Lean Italian ground turkey
1 medium white onion diced
1 green bell pepper diced
1 large clove of garlic diced
1 1/2 cups of shredded carrots
1 tsp. of dried oregano
1 tsp. dried thyme
Salt and pepper to taste
2 tbs. fresh Italian parsley chopped
2 tbs. Extra virgin olive oil
2 15 oz. cans of drained and rinsed cannellini beans
1 15 oz. can of diced tomatoes
1 carton of chicken stock or 1 quart of homemade chicken stock
Cooking Instructions
On medium heat, brown the ground turkey in the olive oil with the seasonings, onion, bell pepper, garlic and carrots. ( About 10 min.) Once browned, add the tomatoes, beans and the chicken stock to the mixture. Let the chili cook on low heat for about 45 minutes so that all the ingredients can incorporate together and become the best tasting Italian chili that you have ever eaten!!!!!
To give it a thicker consistency, you can puree 1/2 cup of the cannellini beans before adding it to the chili.
**This recipe has been months in the making!!! After several attempts, I think that I have come close to the recipe for our favorite “Italian Chili”:)
