In a stock pot, heat olive oil on medium heat. Add sausage, salt, pepper, onion, garlic, scallions until browned. Add rotel, puree, beans, squash, carrots, fennel seed, 1 tbs. of Italian parsley and stir. Season to taste as you layer in the ingredients. Add the beans, Parmesan rind and chicken stock to the mixture. Bring to a slow boil and add the mashed beans for thickness. Cook on medium heat for 20 to 30 minutes and then add spinach and 1 tbs. of fresh Italian parsley. Cook for 5 to 10 minutes more. Garnish with freshly grated Parmesan cheese and ENJOY!!!
